Ingredients:

  • 3 x Strong Roots Smashed Pea & Lemon Bites

  • 2 tbsp guacamole

  • 2 tbsp spicy corn kernels

  • ½ fresh chopped tomato

  • 1 tbsp salsa

  • Small bunch of pea shoots

  • 1 poached egg

  • Buffalo mayo

  • 1 toasted sourdough muffin

Tomato salsa

  • 3 tomatoes

  • ½ red onion

  • 2 garlic cloves

  • 1 tbsp fresh coriander

  • ½ lime, juiced

  • Salt & pepper

Method:

  1. Fry Strong Roots Smashed Pea And Lemon Bites for 4 minutes at 175 degrees from frozen. Lightly crush with a fork to reveal the green interior

  2. Halve and toast an English breakfast muffin on both sides

  3. Poach an egg in water with a splash of white vinegar and salt at a rolling boil until a runny centre is achieved

  4. Chargrill par boiled cobs until lightly blackened and brush with butter and cayenne pepper

  5. For the tomato salsa - deseed and finely dice fresh tomatoes, mix with chopped onion, garlic, coriander and salt and pepper

  6. Spread sliced muffin with guacamole

  7. Top with Smashed Pea & Lemon Bites, poached egg, spicy corn, salsa, leaves of fresh coriander and pea shoots
