2 tbsp spicy corn kernels
½ fresh chopped tomato
1 tbsp salsa
Small bunch of pea shoots
1 poached egg
Buffalo mayo
1 toasted sourdough muffin
Tomato salsa
3 tomatoes
½ red onion
2 garlic cloves
1 tbsp fresh coriander
½ lime, juiced

Method:
Fry Strong Roots Smashed Pea And Lemon Bites for 4 minutes at 175 degrees from frozen. Lightly crush with a fork to reveal the green interior
Halve and toast an English breakfast muffin on both sides
Poach an egg in water with a splash of white vinegar and salt at a rolling boil until a runny centre is achieved
Chargrill par boiled cobs until lightly blackened and brush with butter and cayenne pepper
For the tomato salsa - deseed and finely dice fresh tomatoes, mix with chopped onion, garlic, coriander and salt and pepper
Spread sliced muffin with guacamole
Top with Smashed Pea & Lemon Bites, poached egg, spicy corn, salsa, leaves of fresh coriander and pea shoots
